Russet (see left) & Bramley will be next on the list, they're looking good on the trees at the moment. We're doing a big volume this year as it is our most popular juice, and the trees are loaded! The Somerset Redstreak (see right) have been picked & pressed for cider, and the ripeness is way beyond expectation, with potential alcohol at 8%. The juice is so good that I may use some for a single variety cider. We'll see how it turns out! Everything else is still on the trees, getting as ripe as possible before picking. I filmed the trees being shaken this year, and you can see a short youtube clip here: You can see that most of the apples had dropped naturally as they were so ripe. Once the apples are on the floor, we send in a team of pickers to collect the very best, removing damaged and rotten fruit before it gets to the press!
